Ingredients
  

DRY INGREDIENTS

  • 1.5 Cup Refined flour / Maida
  • 1 Tsp Baking powder
  • 1/2 Tsp Baking soda
  • Pinch Salt / Namak
  • 1.5 Tsp Coffee
  • 3/4 Cup Coco powder
  • 1/2 Cup Powdered Sugar / Chene

WET INGREDIENTS

  • 1 Cup Curd / Dahi
  • 1 Tsp Vanilla
  • 1/2 Cup Oil / Tel
  • 3/4 Cup Milk / Doodh

SYRUP

  • 1 Tbsp Powdered Sugar / Chene
  • 1/2 Cup Hot Water / Garam pani
  • 1/2 Tsp Coffee

WHIPPING CREAM

  • 1.5 Cup Whipping Cream Chilled
  • 1/4 Cup Coco powder
  • 1 Tsp Coffee
  • 1/4 Cup Powdered Sugar / Chene If required

GANACHE

  • 5 Tbsp Fresh cream
  • 1.5 Tbsp Butter
  • 100 gm Dark Chocolate

Instructions
 

  • Make a baking tin ready.
  • In a bowl sieve and mix all the dry ingredients – Refined flour, Coco powder, Coffee, Baking powder, Baking soda, Salt and Sugar.
  • Take another bowl and mix all the wet ingredients – Curd, Milk, Oil and Vanilla.
  • Now gradually add the bowl of dry ingredients into the wet ingredients and mix using a whisk or a spatula till everything gets well incorporated. ( Dont over mix )
  • Immediately drop the batter in the cake tin and keep it to bake in preheated oven at 180⁰C for 40-45 minutes or over the gas stove on low for 50-55 minutes.
  • Take out cover with a cloth and let it completely cool.
  • Meanwhile make a syrup with a blend of hot Water, Coffee and Sugar.
  • Also make frosting by mixing Sugar, Coffee, Coco powder in the whipping cream.Then beat chilled whipping cream till stiff peaks and firm.
  • Slice the cake in into layers and soak it with made Sugar Coffee syrup.
  • Apply equal quantity of cream on every layer and also cover the cake all over with the cream frosting.
  • Now make a Chocolate ganache with a mix of Chocolate, fresh cream and Butter using microwave or double boiling method.
  • Spread the ganache over the top of the cake with a dropping border.
  • Make flowers using the remaining whipping cream with any big star nozzle and we are done.
  • Coffee chocolate Mocha cake is ready.

Note

  • The cake batter should have a dropping stair like consistency.
  • To ready the cake tin for baking you can either grease it and then line it by sprinkling some flour, over it taking out the excess flour or line the tin with parchment paper greased on both sides.
  • To bake the cake over gas stove in a kadai or pressure cooker( without whistle), first preheat it on low for about 10 minutes. While baking keep a stand under the baking tin and bake for 10 minutes on medium and then on low for 50-55 minutes.
  • if the inserted toothpick comes out clear after baking, it shows the cake is baked.
  • Before putting the first layer of sliced cake on the cake board, drop little cream on it, so that the cake remains firm while decorating.
  • For double boiling method melt chocolate over a boiled Water ( gas switched off ) without the vessel touching the Water.And in microwave you can melt the Chocolate by keeping it for 10 to 15 seconds , but check and recheck it in intervals.
  • While poring the ganache over the cake, the cake shouldn’t be chilled otherwise it will be difficult for the ganache to spread.
  • You can add dry fruits and nuts like Almonds, raspberries, Banana and Walnuts to the chocolate coffee cake that will take your cake to next level.

If you want to make Gajar cake healthy then instead of using refined flour make it using wheat flour or Millet flour you can make your Carrot cake low-calorie cake by making it vegan way. That means not only eggless you can even make it free of Dairy products, so instead of milk use coconut or Almond milk. Winter Carrots are more soft, sweet, and have a beautiful red color but if you are making this Carrot cake in summer you have the option of an orange carrot which is harder and less sweet in texture and taste. For a diabetic sugar-free cake use natural sweetness such as Dates to make the cake sweet. Vegan gluten-free carrot cake can be made with Millet or Almond flour.

Ingredients
  

  • 3 Cup shredded Carrot / Gajar
  • 1/4 Cup Clarified butter / Desi ghee
  • 1/4 Cup Oil / Tel
  • 1 +1/4 Cup Milk / Doodh
  • 3 Tbsp Milk powder
  • 1/2 Cup Sugar / Cheeni
  • 1/4 Tsp Cinnamob powder / Dalchini
  • 1/4 Tsp green Cardamom powder / Hari elaechi
  • 2 Cup Refined flour / Maida
  • 1/2 Tsp Baking soda
  • 1 +1/2 Tsp Baking powder
  • 1 +1/2 Cup Curd / Dahi
  • A pick Salt / Namak
  • 1/4 Cup chopped Cashews / Kaju
  • 1/4 Cup Raisin / Kishmish
  • 1/4 Cup chopped Almonds / Badam

Instructions
 

  • Cut Carrot on both ends, peel ,rinse and shred the Carrot.
  • In a Kadai or a Pan add both Clarified butter and Oil.
  • Sauté the shredded Carrot in this for about 15 minutes,stirring occasionally over medium.
  • Now add 1 cup Milk and Sugar, give a stir, cover and cook on medium for 5 minutes.
  • Add Cinnamon, Cardamom and Milk powder.Give a stir and then switch off the stove.Let it cool down.
  • Grease cake mould and then either sprinkle and spread some flour over it or place a parchment paper.
  • In a bowl sift refined flour, to this add Baking soda, Baking powder and Salt.Give a good mix and keep aside.
  • Whisk Curd and then add the made Gajar halwa.Whisk till it blends in smoothly.
  • Gradually add in and mix the bowl of dry ingredients to make the cake batter.
  • Add some dry fruits in the batter and then again give it a mix.
  • Drop the batter in the cake mould spreading layers of dry fruits in between to get more dry fruits in every bite.
  • Jiggle and tap to level the cake batter.Spread and place the remaining dry fruits over it. Give it a lite tap with your fingers so that the dry fruits don’t come out after baking.
  • Pop in a preheated oven and bake at 180°C for 50 minutes to an hour or till the tooth pick comes out clean.
