Ingredients
  

DOUGH

  • 1/2 cup Wheat flour / Atta
  • 1/2 cup Refined flour / Maida
  • 1 tbsp Oil
  • Salt to taste or 1/2 tsp Salt
  • 1/2 Cup +2 tbsp Milk

FILLING

  • 1/2 cup Cottage cheese / Paneer
  • 1/4 cup Mozzarella cheese or 2 cubes processed cheese
  • Salt to taste
  • 1/4 tsp Turmeric / Haldi
  • 1 tsp Dry Mango powder / Aamchur
  • 1/2 tsp Carom / Ajwain
  • 1 tsp grated Ginger / Adrakh
  • 1/2 tsp Chilli paste
  • 1/4 tsp Red chilli powder / Lal mirch
  • 1/4 tsp Cumin powder / Zeera
  • 1 tbsp chopped Coriander / Dhaniya
  • Oil Ghee or Butter for Roasting

Instructions
 

  • Mix the two flours add Salt and Oil.
  • Rub between your fingers till flour turns into bread crumbs.
  • Adding Milk at room temperature,make a soft dough.
  • Keep the dough covered for about 30 min.
  • Meanwhile keep the Paratha stuffing ready by adding together all the ingredients listed above for filling.
  • Divide the dough in four equal dough balls.
  • Take one dough ball roll it out into a small roti ,place about 2 teaspoons of filling and then close it either in square shape or round.
  • Spread out in form of paratha roti.
  • Place over hot griddle / tawa and roast on a medium heat adding Ghee or Butter or Oil on both sides till the Paratha gets brown spots.

Note

  • Instead of Milk you can also knead the flour using Water.
  • Keep on kneading the dough for about 5 min to get more soft Parathas.

Ingredients
  

  • 1 cup fresh peas / matar
  • 3 tomatoes / tamatar
  • 1 inch ginger / adrakh
  • 3-4 chillies / hari mirch
  • 6-8 garlic cloves / lasan
  • 1 black cardamom / badi elaechi
  • 1/2 cup fresh coriander / dhaniya
  • 2 potatoes / aloo
  • 3-4 tbsp mustard oil / sarso tel
  • 2 cloves / loung ( powdered
  • 1 pinch asafoetida / hing
  • 1 tsp cumin / zeera
  • as per taste salt / nnamak
  • 1/4 tsp cinnamon / dalchini
  • 1/2 tsp garam masala
  • 1 tsp red chilli powder / lal mirch
  • 1 tsp turmeric ! haldi
  • 1 tsp coriander powder / dhaniya

Instructions
 

  • To a mixer grinder add 1/2 cup peas and coarsely grind them.Take it out and keep aside.
  • Now to the grinder add Tomatoes, Ginger, Chillies, Garlic, Black cardamom and Coriander.Grind into a fine paste.
  • Cut Potatoes in long cubes.
  • Heat mustard oil till smoked out, then fry Potatoes till light golden.Strain out and keep aside.
  • Keep heat low and in the remaining oil keeping heat low add Cloves powder, Asafoetida and Cumin .Let the Cumin crackle few seconds on low.
  • Add coarsely grinded peas in the Oil,also remaining 1/2 cup ungrinded peas and Salt.
  • Continuous stirring, saute for couple of minutes.
  • Add Cinnamon powder and Garam masala continue stirring for another couple of minutes.
  • Add made paste, red chilli powder, turmeric and Coriander powder.
  • Over low saute till the paste dries.Add about 1 cup Water and then cover and cook over low to medium till Water dries.
  • Now again add about 2 cups of Water and fried Potatoes.
  • Mix, cover and cook for about 5 minutes.
  • At last sprinkle some fresh Coriander and serve with Roti or Steaming Rice.

Note

Don’t worry if the sugar doesn’t melt in butter.Eventually it will melt while baking.

Ingredients
  

  • 500 gm Cabbage / Bandh Gobhi / Patta Gobhi
  • 1/2-1 cup Fresh peas / Matar
  • Salt to taste / Namak swad anusar
  • 2 tbsp Oil / Tel
  • 1/2 tsp Cumin / Zeera
  • Pinch Asafoetida / Hinge
  • Pinch Cloves powder / Lounge
  • 2 Bayleaves / Tej patta
  • 2-3 Chilli / Mirch
  • 1/2 – 1 tsp Red chilli powder / Lal Mirch powder
  • 1/4 tsp Cinnamon powder / Dalchini
  • 1 tsp Turmeric / Haldi
  • 1 tsp chopped Ginger / Adrakh
  • 1 tsp Dry Fenugreek / Kasoori methi
  • 1/2 tsp Cumin powder /Zeera powder
  • 1/2 tsp Garam masala

GARNISH

  • Some fresh Coriander / Dhaniya

Instructions
 

  • Cut and rinse Cabbage.
  • In hot Oil add Bayleaves and Cumin.Let the Cumin crackle few seconds over low.
  • Now add Asafoetida,Cloves powder and Ginger then chopped Cabbage along with chopped Chillies.
  • Sauté Cabbage over high till tender,stirring in between.
  • Now add then mix Peas,Turmeric,Chilli powder,Cinnamon powder,Cumin powder,Dry Fenugreek leaves and Garam masala.
  • Sauté for another 5-7 minutes on medium then add some Chillies and fresh Coriander for garnish.

Note

  • You can sauté Cabbage covered stirring in between.
