While using salted butter for cookies, most probably you don’t require to add extra salt to your cookies.Just beat the butter very well till it gets soft and fluffy and then add the flour, shape and bake these delicious butter cookies.

Ingredients
  

  • 125 gm Salted Butter
  • 1 cup Wheat flour
  • 1 cup Refined flour / Maida
  • 1/2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/2 tsp Roasted Cumin seeds / Zeera
  • 1/2 cup Milk

Instructions
 

  • Beat butter using a spatula or a hand blender adding sugar until its smooth and fluffy.
  • Add flour.
  • Make dough without kneading using milk.
  • Roll out in 1/2 cm thick sheet.
  • Cut out using cookie cutter.Make any design of your choice.
  • Bake at 180°C for 20-25 min.
  • Cool serve or store.

Note

Don’t worry if the sugar doesn’t melt in butter.Eventually it will melt while baking.

Sugar Free Multi Millet Aata Cookies

A healthy tasty option for your evening biscuits which are not only made without Sugar or maida but with a nutritious healthy alternative of Millets.

Ingredients:- ( Serves 15-20 )

  • 300 gm wet Dates / Khajoor
  • 100 gm Salted Butter
  • 1/2 cup Milk / Doodh
  • 1/2 tsp Baking soda
  • 1/2 tsp Baking powder
  • 1/2 tsp green Cardamom powder / Hari elaechi powder
  • 1/2 cup Finger millet / Ragi flour
  • 1/2 cup Sorghum /Jowar flour
  • 1/2 cup Oats flour
  • 1/2 cup Wheat / Gahoo flour
  • 1/4 cup broken Cashews / Kajoo

Method:-

  1. Deseed Dates and grind them into a fine paste adding warm Milk.
  2. Beat butter till soft and fluffy add and mix in Baking powder,Baking soda and Cardamom powder
  3. Now add the made paste and mix again.
  4. Now drop in Ragi,Jowar, Oat, Wheat flour.respectively and Cashew pieces.
  5. Mix and put together the flour without kneading into a ball.
  6. Wrap the dough ball with a cling film or plastic wrap and set it to set set in refrigerator for minimum 1 hour.
  7. Take out and divide the dough into small lemon size portions and then flatten it giving square or round shape.
  8. Press in few more Cashew pieces over it to decorate .
  9. Place the cut out cookies over a greased baking tray keeping little gap in between.On gas stove bake for 20-25 minutes over low.In Convection/OTG you can bake at 180°C for 25-30 minutes.
  10. Cool and you can store them airtight.

Tips :-

  • You can refrigerate the dough upto 2 days.
  • To make the Cookies you can even use a cookie cutter by first rolling out the dough and then cut out shapes.
  • Don’t make the cookies too thick otherwise they will remain raw.
  • To bake over gas stove you can use a Kadai or a Pressure cooker.Keep a stand in it to place your baking tray on it while baking .Before baking cover to preheat the setup over low for 10 minutes.
  • After baking cookies might still feel soft initially though already done .To check if they are perfectly ready or not see at the back if they have turned brown it shows they are baked.
  • After baking you can still keep the cookies in warm Oven till they get perfectly crisp.
  • If you want instead of Dates you can use 1/2 cup powdered Sugar and combine flour using Milk.
