Ingredients
  

  • 1 tbsp Oil
  • 1/2 tsp Red Chilli Flakes
  • 1/2 tsp Pizza seasoning
  • 2 Onion
  • 1/2 tsp Garlic paste
  • 1 cup Tomato purée
  • 1/2 tsp Pepper
  • Salt to taste
  • 1 tbsp Tomato ketchup

Instructions
 

  • Heat Oil and in hot Oil add Red chilli flakes,Pizza seasoning and within 30 seconds add Onion paste. Sauté onion on medium till it slightly changes color and then add Garlic paste.
  • Continue sauting for another 30 seconds and then add Tomato purée.
  • Keep on sauting on medium.
  • Add Salt,Pepper and Tomato ketchup.
  • Cook on low heat for about 10 minutes and it’s ready.

Note

  • Pizza sauce should be spreadable,neither too thick nor too thin.
  • You can freeze Pizza sauce for about a year.
  • kuse Olive oil to get that Italian flavor.
  • while adding Onion , you can also add chopped Bell pepper.

Amrakhand can be made also using greek Yogurt in which whey has been strained out, so you save your time and just mix in the Mango pulp to get Amrakhand.

In the second method, you need to cook the blended Mango pulp for some time till it gets thick, and then add it to the hung Curd. Here you get this thick creamy Amrakhand same as a packaged one in spite of not keeping Amrakhand in an earthen pot.

Ingredients
  

  • 1 Litre Full Fat Milk / Doodh
  • 5-6 Mangoes / Aam
  • 5 tbsp Sugar / Cheeni
  • Some Mango pieces
  • Some Pistachios/ Pista

Instructions
 

  • Make Curd out of the milk.
  • Keep the Curd hung or below some heavy weight in a sieve tied in a Cotton or a muslin cloth for at least 12 hours to get hung Curd.
  • Meanwhile blend Mango pulp into a purée.
  • Cook this Mango purée with added Sugar stirring continuously on medium.
  • Switch it off when Sugar melts and mango sauce starts splattering or gets somewhat thick.
  • Transfer to a boil and let it to chill in the fridge after it comes down to room temperature.
  • After 12 hours Curd gets thick releasing its excess Water , looks like Paneer.
  • Take it out in a bowl and beat it using a spoon till it gets smooth and fluffy.
  • Add the made Mango sauce little at a time and mix it, till you get a desired taste and texture.
  • Drop in a earthen pot and garnish with some chopped Mango pieces and Pistachios.
  • Serve chilled.

Note

  • Storing and serving in earthen pots makes Amrakhand more thick and creamy.

  • 1/4 cup Peanuts / Moongfali
  • 1/4 cup Pistachio / Pista
  • 1/4 cup Walnut kernels / Akhroat
  • 1/4 cup Chia seeds
  • 1/4 cup Flax seeds / Alsi beej
  • 1/2 cup Milk powder / Sukha doodh powder
  • 1/2 tsp green Cardamom powder / Hari Elaechi
  • 1/2 cup Raisin / Kishmish
  • 1/4 cup Roasted Channa sattu Optional
  • Milk

Instructions
 

  • Roast Makhana on low-medium 2-3 minutes,then add Pumpkin seeds,Melon seeds and Oats.
  • Roast on medium stirring intermittently till little crisp.
  • Transfer all ingredients into a bowl.
  • Now drop in Almonds,Cashews,Peanuts,Pistachio and Walnuts.Roast 2-3 minutes stirring intermittently till crisp.
  • Transfer to bowl.
  • Next roast Chia and Flex seed also on medium stirring continuously.for 1-2 minutes and then transfer to the bowl.
  • Completely cool all the roasted ingredients and then grind into a fine powder.
  • In the made protein powder mix Milk powder,Cardamom powder and Raisins.
  • You can add about 2 teaspoons of the powder to warm Milk for more protein and energy.
  • Keep the made Protein powder stored in an airtight container.

Tips

  • To the Milk for more sweetness you can mix in Honey.
