Ingredients
  

  • 4 cup Refined flour / Maida
  • 1/3 cup Milk powder
  • 1 tsp Salt
  • 2 +1/4 tsp Dry Instant Yeast
  • 2 tbsp Powdered sugar
  • 1 +1/4 cup Hot Water
  • 3 tbsp Oil or Margarine
  • 2 tbsp Cinnamon / Dalchini
  • 2 tbsp granulated Sugar
  • 2 tbsp Butter
  • 1/4 cup Raisin / Kishmish

BREAD WASH

  • 1 tbsp Sugar + 1 tsp powdered Sugar

Instructions
 

  • Mix Refined flour,Milk powder and Salt together.
  • Then make a space in between this flour mix adding Dry instant yeast and powdered sugar.
  • Drop little warm water over it dissolving sugar and yeast together.
  • Now mix this with the whole flour and knead it into a soft sticky dough.
  • Knead over your kitchen counter for about 10-12 minutes stretching with your palm.
  • Next Oil in the dough and keep it to proof in a greased bowl covered with a plastic wrap for about 2 hours in a warm place like your oven.
  • Meanwhile keep a mix of sugar and cinnamon ready and grease your bread tin sprinkling little flour over it.
  • After that knead and punch the dough again for about 5 minutes.
  • Spread dough as long as possible in a half inch thick sheet. Apply butter..
  • Sprinkle Cinnamon sugar mix and raisins.
  • Roll in the dough sheet tucking in both sides and also close above,
  • Now place the dough log in bread tin with seam side below.
  • Again cover it with plastic wrap and let it sit for 1 hour in warm place.
  • To get bread with a golden crust brush sugar milk mix over it.
  • Bake at 180°C for 35-40 min.
  • To get soft outer crust cover bread with a damp cloth till it cools down.
  • Demold and cut to get soft cinnamon raisin bread.

Note

  • Instead of using powdered sugar you can use Honey.
  • If required use dry flour while kneading.
  • Don’t put on your oven when bread is kept to proof.
  • If Raisin are big cut them into half.
  • Instead of sugar milk wash you can even do egg yolk wash.

  • 2 Tbsp Gram flour / Besan
  • 4 Tbsp Warm oil / Garam tel
  • 1 Tbsp melted Clarifief butter / Desi ghee
  • 1 Tbsp Dry Fenugreek / Kasoori methi
  • 1 Tsp Dry Pomegranate / Anardana
  • 1 Tsp Chilli paste / Mirch
  • 1 Tbsp Fresh Coriander / Hara dhaniya
  • 1 Big Onion / Pyaz
  • 1 Tsp Carom seeds / Ajwain
  • 1 Tsp Cumin seeds / Zeera
  • 1/2 Tsp Salt / Namak
  • 1/2 Tsp Pepper/ Kali mirch
  • Water as much required
  • More Ghee for roasting Koki

Instructions
 

  • In a bowl add wheat flour, Salt and Gram flour, Give it a mix.
  • Add Oil and Desi ghee, well blend it within the flour.
  • Now add Dry Fenugreek,Dry Pomegranate, Chilli paste, fresh Coriander, finely chopped Onion, Carom seeds, Cumin seeds,and Pepper.Give a good mix.
  • Adding Water bring the flour together – Don’t knead.
  • Apply a tablespoon of warm Oil.
  • Divide the dough into about four equal portions and roll out each portion into a thick rot.(Apply little flour if required)
  • Make indents in the roti using a spoon.
  • Roast the roti over a hot tawa applying ghee all over on both sides till golden brown spots.
  • Serve Sindhi Koki hot with Tomato or Coriander chutney and a cup of tea..

Note

Roast Koki on low to medium heat giving a little press using a flat spatula, to make it crisp and well roasted.

DHOOSKA

  • 1 Cup Rice / Chawal​
  • 1/2 Cup Split Bengal gram / Chana dal​
  • 1/4 Cup Split Black Gram / Urad dal​
  • 2 Cup Water / Pani​
  • 1 +1/2 inch Ginger / Adrakh​
  • 3-4 Chillies / Mirch ​
  • As per taste Salt / Namak​
  • 1/4 Tsp red chilli powder​
  • 1/4 Tsp Turmeric / Haldi​
  • 1.2 Tsp Coriander powder / Dhaniya ​
  • 1/2 Tsp Cumin / Zeera
  • Oil to fry​

Instructions
 

  • Rinse Rice, Chana dal and Urad dal all together and then soak them in Water for about 4 to 5 hours.​
  • Grind this into a smooth batter along with Ginger and Chillies.The batter should not be too thick nor too thin.​
  • Keep this batter to ferment for an hour.​
  • Next add and mix into the batter Salt, Chilli powder, Turmeric, Coriander powder and Cumin.​
  • Drop a spoon full of the batter in medium hot Oil on medium heat , it will puff up,​
  • Flip till golden brown on both sides and then strain out.​

  • 6 medium boiled Potatoes / Aloo​
  • 2 Tbsp Mustard Oil / Sarso tel ​
  • 1 Tsp Cumin / Zeera ​
  • 1 inch Ginger​

  • 2 medium Tomatoes / Tamatar​
  • As per taste Salt / Namak​
  • 1 Tsp Kashmiri red chilli powder​

Instructions
 

  • Heat Mustard Oil in a pressure cooker till smoked out.​
  • Keeping heat low add Cumin and let it crackle few seconds.Next add Ginger .​
  • Give it a stir and then add chopped Onions.Saute till translucent.​
  • Now add boiled Potatoes cut into midsized pieces..Saute about 5 minutes.​
  • Add chopped Tomatoes, sauté again for about 5 minutes.​
  • Keeping heat low add all the spices-Salt, Chilli powder, Turmeric, Coriander powder, Cinnamon powder and Garam masala.Give a stir.​
  • Add Water and Chillies.Dive 2-3 whistles.​
  • Aloo sabji is ready .Garnish with some fresh Coriander.
