Tomato Mixed Veg Soup

A super healthy and delicious soup made in no time.Make it with mix of vegetables of your choice.

Ingredients:-  ( Serve 4 )

  • 2 tbsp Butter
  • 1 Onion paste / Pyaaz
  • 1/2 tsp grated Ginger / Adrakh
  • 1 tsp Garlic paste / Lasan
  • 1 cup Broccoli florets
  • 1 cup Peas / Matar
  • 1 cup Carrot / Gajjar
  • 1.cup Green Garlic / Hara Lasan
  • 1 cup French beans / Gawar fali
  • 1 cup Capsicum / Shimla mirch
  • 1 cup Cabbage / Bandh Gobi
  • Salt to taste
  • 1 cup Tomato purée / Tamatar
  • 1/2 tsp Carom seeds / Ajwain
  • 1/2 tsp Pepper / Kali mirch
  • 1 tbsp Corn flour

Method:-

  1. In butter sauté Onion till it gets lite golden in colour.
  2. Add Ginger and Garlic.Saute for 30 seconds to a minute.
  3. Now one by one add all the finely chopped veggies along with Salt.
  4. Sauté the veggies over medium to high heat till they settle down a bit and get little soft but still crisp.It will take you about 15 minutes
  5. Add about 1.5 litres of Water,Carom seeds,Pepper and Tomato purée.
  6. Let the soup to boil and then put on the lid,let it boil cook over low for 15-17 minutes.
  7. Meanwhile adding about 1/4th cup of Water to the Corn flour make a Corn syrup.
  8. Add the made Corn syrup to the soup to make it thick.Ket it boil for 5 minutes before you put off the stove.
  9. Serve hot with any bread.

Tips :

  • You can garnish with Coriander leaves.

Sweet Corn Soup

We all love knorr soups specially kids love sweet corn soup.Here we will be making sweet corn soup at home pure without any stabilisers or preservatives and that super delicious.Lets begin..

Ingredients:-  ( Serve 4 )

  • 1 cup America Sweet corn kernels
  • 1 tbsp Cornstarch
  • 1/2 tsp White Pepper / Safad Mirch
  • Salt to taste
  • 2 tbsp Butter
  • 2 Spring Onion / Hari pyaaz
  • 1/2 cup Beans
  • 1/2 cup Carrot / Gajjar
  • 8-10 finely chopped Garlic cloves / Lasoon
  • 1 tbsp finely chopped Celery

Method:-

  1. Adding couple of tablespoons Water make a thin paste of 1/4 cup sweet corn kernels.
  2. In Butter sauté ( spring Onion bulb ) Onion until soft.
  3. Add all the veggies including remaining 3/4 cup sweet corn and cstalk of spring onion.Continue sauting over low for 3-4 minutes.
  4. Then add finely chopped Garlic cloves and keep on sauting for another 30 seconds to a minute.
  5. Add salt and about 1.5 litres of water,let it cook over medium covered for 5-7 minutes.
  6. Now in quarter cup of water dilute corn starch and pepper.Add this to your soup.
  7. Let it simmer for couple of minutes before putting it off.

Tips :

  • When the soup is simmering you can add finely chopped celery for that extra knorr soup flavour.

Make this healthy tasty restaurant style soup using Broccoli and Mushroom ideal for winter.

Ingredients:-

  • 1 Broccoli 
  • 5ogm Butter
  • 2 medium Onion
  • 1 Cup Button Mushroom 
  • 1 tsp Garlic Paste
  • Salt to taste
  • 3 Cups Water
  • 1 tbsp Corn starch
  • 100gm Fresh cream
  • 1tsp Pepper
  • 1 Cup Milk
  • 50 gm Cheese
  • 1 tbsp Celery

Method:-

  1. Cut the broccoli into florets
  2. Melt and heat butter and then add chopped Onion,fry them for couple of minutes and then add Mushroom.
  3. Within a minute add Broccoli florets.Then keep on sauting all the ingredients for about 5 minutes on medium heat.
  4. Now add Garlic paste and Salt then keep on sauting for about 10 minutes.
  5. Add about 2 cups of Water and let it cook on medium heat till Broccoli gets tender.
  6. We now need to mix Corn starch in 1 Cup of Water and then add this into The boiling soup.
  7. Our Broccoli is now tender,add into it Fresh cream, Pepper,Milk,celery and Cheese in the boiling soup.
  8. Checking the consistency and serve hot.

Tips:-

Restaurant Style Home Made Tomato Soup

Tomato soup a common starter loved by all is made here in very easy way with minimum ingredients and maximum taste.

Ingredients:-

* 6 Big Red Tomatoes
* 1 Big Onion
* 1 Carrot
* 2 tbsp Parsley Leaves
* 1 tsp Garlic Paste
* 1 tbsp Olive Oil
* Salt to taste
* 3 Cups Water
* 1/2 tsp Black Pepper Powder
* 1 tbsp Fresh cream
* Corn Starch ( Optional )

Method:-

1. Crush all together- Tomatoes, Onion,Carrot,Parsley and Garlic in a mixer grinder.
2. In a pot add Oil and in that add the made Paste.
3. After sauting it for about 15 min add water into it.Strain out the water after one or two boils.
4. Squeeze out the pulp and then again start cooking the separated out juice.
5. Check the consistency of the juice ,how much thick or thin you prefer depending on that keep on boiling.
6. After boiling on medium heat for about 10 min put off the heat and pour in the serving bowl.
7. Garnish with Fresh cream and serve with croutons.j

Tips:-

* If you don’t have fresh Parsley Leaves you can even use Dry mixed herbs instead of that but its completely optional.
* To make the juice more thick you can add corn starch to it ,some even prefer boiled potato.

Fresh Creamy Mushroom Soup

Fresh creamy restaurant style mushroom soup made easily at home


Ingredients:-

  • 250 gms Button Mushrooms
  • 1/3 rd Cup Corn flour to make Corn starch
  • 250 gms Butter
  • Salt to taste.
  • 1 tsp pepper
  • 4 Bouillon cube or 4 tsp of Bouillon ( Veg or non Veg)
  • 1 Big Onion
  • 1 rsp Garlic & Ginger Paste
  • 1 Cup Cream
  • 3 ½ Cups Water
 
Method:-

  1. Wash the mushrooms and pull out the stem part aside.
  2. Cut the round head part in slices.
  3. Take a pan add the butter into it and then the sliced mushrooms.
  4. Keep on cooking till tender.
  5. Now strain them out and add the kept aside stem part of the mushroom ibto the pan.
  6. Add the diced onions, garlic & ginger paste into it.
  7. Keep on cooking till onions tender.
  8. Meanwhile mix the Bouillon into the water.
  9. Add the corn starch into the pan, that works as a thickening agent.
  10. Add the Bouillon mixture and continue stirring till the mixture starts getting thick.
  11. Pour the whole of it now into a blender.
  12. Then again add the blended soup into the pan and start boiling for the desired thickness.
  13. Don’t forget to add here salt, pepper, cream and of course the fried mushrooms kept aside.
  14. Serve hot.
