Ingredients
  

DOUGH

  • 1/2 cup Wheat flour / Atta
  • 1/2 cup Refined flour / Maida
  • 1 tbsp Oil
  • Salt to taste or 1/2 tsp Salt
  • 1/2 Cup +2 tbsp Milk

FILLING

  • 1/2 cup Cottage cheese / Paneer
  • 1/4 cup Mozzarella cheese or 2 cubes processed cheese
  • Salt to taste
  • 1/4 tsp Turmeric / Haldi
  • 1 tsp Dry Mango powder / Aamchur
  • 1/2 tsp Carom / Ajwain
  • 1 tsp grated Ginger / Adrakh
  • 1/2 tsp Chilli paste
  • 1/4 tsp Red chilli powder / Lal mirch
  • 1/4 tsp Cumin powder / Zeera
  • 1 tbsp chopped Coriander / Dhaniya
  • Oil Ghee or Butter for Roasting

Instructions
 

  • Mix the two flours add Salt and Oil.
  • Rub between your fingers till flour turns into bread crumbs.
  • Adding Milk at room temperature,make a soft dough.
  • Keep the dough covered for about 30 min.
  • Meanwhile keep the Paratha stuffing ready by adding together all the ingredients listed above for filling.
  • Divide the dough in four equal dough balls.
  • Take one dough ball roll it out into a small roti ,place about 2 teaspoons of filling and then close it either in square shape or round.
  • Spread out in form of paratha roti.
  • Place over hot griddle / tawa and roast on a medium heat adding Ghee or Butter or Oil on both sides till the Paratha gets brown spots.

Note

  • Instead of Milk you can also knead the flour using Water.
  • Keep on kneading the dough for about 5 min to get more soft Parathas.

Ingredients
  

  • 250 gm Potatoes / Aloo
  • 1 tsp Salt in boiling Water
  • 1 tsp Garlic paste / Lasan
  • 1 tsp Ginger paste / Adrakh
  • Salt to tastei
  • 1/2 tsp Pepper / Kali mirch
  • 1/2 cup Rice flour / Chawal ka Atta or Corn flour
  • 1/4 cup Refined flour / Maida
  • Oil for frying
  • 2 tbsp Oil for gravy
  • 1 Onion / Pyaaz
  • 1 tbsp chopped Garlic
  • 2-3 slit green Chillies / Hari mirch
  • 1 tsp Kashmiri red chilli powder / Lal mirch
  • 1/2 Capsicum / Shimla mirch
  • 1 tsp White Sesame / Safad TIL
  • 2 tsp Soya sauce
  • 1 tbsp Tomato ketchup
  • 1 tbsp Honey / Shahad
  • 1 tsp Corn flour
  • Some roasted Sesame seeds / Til

Instructions
 

  • Peel wash and cut potatoes in shape of French fries.
  • Again rinse couple of times to remove as much starch as possible
  • In a vessel take Water about 4-5 cups or as much that the potatoes get completely immersed.
  • Now add Salt and the cut Potatoes.
  • After Water comes to boil,simmer and let the Potatoes get boiled 3-4 minutes or until 60% cooked.
  • Strain out in a mixing bowl,adding Ginger-Garlic paste,Salt,Pepper,Rice flour and Refined flour.
  • Add 4-5 tbsp Water or as much that the flour gets wet into a thick paste like consistency forming a thick coasting over the Potato pieces.
  • Fry Potatoes in small batches in hot Oil over low till they change colour to yellow.
  • Then refry fried Potatoes till golden brown over medium-high heat.
  • Strain out and keep aside.
  • Heat Oil,add thinly sliced Onion,chopped Garlic,Capsicum,slit green Chillies,Salt and Sesame seeds.Saute over high till Onion start changing colour.
  • Put heat low,add Red chilli powder and then within few seconds add a cup of Water.
  • Add Soya sauce,Tomato ketchup,a slurry of Corn flour mixed in 1/4 cup. water.
  • After this comes to a boil put off the stove adding Honey and fried Potatoes.
  • Gently mix,immediately serve sprinkling roasted Sesame seeds.

Note

  • Instead of paste you can use Garlic-Ginger powder.
  • Try to add Potatoes in separate pieces in Oil to fry to avoid forming cluster.
  • Try to separate them out after 2-3 minutes of frying.

Ingredients
  

DOUGH

  • 2 cup Refined flour / Maida
  • Salt to taste or 1/2 tsp
  • 1/2 tsp Carom seeds / Ajwain
  • 4 tbsp Oil
  • 1/2 cup+1 tbsp Water

STUFFING

  • 2 tbsp Oil
  • 1/4 tsp Asafoetida / Hing
  • 1 tsp Ginger paste / Adrakh
  • 1/2 tsp Chilli paste / Mirch
  • Salt to taste
  • 1 tsp Mango powder / Amchur
  • 1/2 tsp Black salt / Kala namak
  • 1 tsp Red chilli powder / Lal mirch
  • 1/2 tsp Garam masala
  • 2 tbsp Gram flour / Besan
  • 3 medium Onion / Pyaz
  • 1 medium boiled Potato / Aloo
  • 1 tsp Sugar

MASALA

  • 1 tsp Fennel seed / Saunf
  • 1 tsp Cumin / Zeera
  • 1 tsp Fenugreek seeds / Methi Dana
  • 1 tsp Coriander seeds / Dhaniya

OIL FOR FRYING

Instructions
 

  • In the flour add Salt,Carom seeds and Oil.Mix properly till flour turns flaky.
  • Adding Water little at a time make a soft dough.
  • Keep to rest covered for about 15 min.
  • Make a Masala by grinding the four whole spices – Fennel, Cumin, Fenugreek and Coriander seeds into a coarse powder.
  • For the filling roast the ground spices over low for about 30 seconds.
  • After its done add all the other remaining dry & wet spices – Asafoetida, Ginger paste, Chilli paste, Mango powder,red Chilli powder, Black salt, Garam masala along with Salt.
  • Roast for another 30-40 seconds and then add Gram flour.
  • Roast over a medium heat for 2-3 minutes or until it blends perfectly with spices.
  • Saute Onions over medium to high heat until you find them shrieked or soft.
  • Now add mashed boiled Potato.and Sugar.Well mix till you get binding consistency.
  • Put off.Let it cool down and then divide the stuffing in small lemon size portions.
  • Divide the dough too in equal number of portions.
  • Flatten the dough balls with edges thin and thick in the centre.
  • Place the ball of stuffing in centre close and seal it.
  • Spread the stuffed dough ball as big as you want in shape of dome.
  • Fry in hot Oil over a high heat for about 10-12 seconds and then refry it over a low heat till it puffs up and gets crisp golden brown.Flip and fry on other side too till golden brown.
  • Serve hot with khatti methi Imli chutney.

Note

  • Over roasting might make spices bitter.
  • Keep in mind when you start to refry, oil shouldn’t be too hot.Either put off your stove for some time or add more oil in your kadhai to neutralise Oil temperature.
  • Add ghee instead of Oil to get not only crispiness but also flaky flour.
