Ingredients
  

  • 1 cup Chickpeas / Kabuli channa
  • 1 tsp Salt / Namak or as per taste
  • 1 tsp roasted Cumin / Zeera
  • 1 tsp roasted Sesame / Til
  • 3 tbsp Curd / Dahi
  • 5-7 tbsp Oil
  • 5-6 Garlic cloves / Lasan
  • 1 Lemon
  • Some Chilli flakes
  • 1 +1/4 cup Water / Pani

Instructions
 

  • Soak Chickpeas in 2 cups of Water overnight or for 8 hours.
  • Pressure cook for 5 minutes or 5-6 whistles.
  • Let it cool down and then add half of them in a mixer grinder or food processor.
  • Along with it add Cumin,Sesame,Curd, two tablespoons Oil, Salt,Garlic cloves, Lemon and 1/4 cup Water.Now grind for a minute
  • Next add the remaining Chickpeas,3 tablespoons of Oil, and about 1 cup Water.
  • Grind this into a smooth paste-like consistency.
  • Store Hummus airtight in the freezer and take it out an hour before serving. Finish within a week.

Note

  • Chickpeas should be neither too soft nor too mushy after cooking.
  • You should have a powerful grinder to grind Chickpeas.

This sooji Burfi is a healthy mithai recipe which surprisingly tastes awesome. For making this Suji/Rava recipe we have tried not to use too many ingredients, to make it quick and simple.You need not to make any sugar syrup for this Burfi or otherwise you can also make it with Jaggery./Gud for a more healthy version .Avoid over roasting the semolina/Suji otherwise the Burfi may turn out to be hard and dry. You can add food colour or Saffron/kesar to this Suji Burfi to give it a nice colour and flavour. For flavouring and to compensate for the use of ghee you can also add Coconut/Nariyal as we have done here.

Ingredients
  

  • 1 cup Semolina / Suji
  • 1 tbsp shredded Coconut / Nariyal
  • Some chopped Dry fruits / Sukha mewa
  • 1/2 cup Sugar / Cheeni
  • 1/2 tsp green Cardamom powder / Hari elaechi
  • 1 cup Milk / Doodh
  • 1 tbsp Cream

Instructions
 

  • Roast Semolina on low for 10-12 minutes stirring continuously.
  • Add shredded Coconut and dry fruits.
  • After adding dry fruits continue sauting for 2-3 minutes more.
  • Switch off and transfer this mix to a bowl and keep it covered.
  • Next over a low-medium heat melt sugar stirring continuously.
  • Add warm milk and Cardamom powder.Giving a stir intermittently give a stir till the milk gets half.
  • Now switch it off,add and mix fresh cream.
  • After this add this mix to the side kept roasted Semolina and give a mix.
  • Keep this again covered for 3-5 minutes.
  • Now you get a Suji halwa type of consistency.Add this to a greased mould.
  • Set it some chopped dry fruits and let this to cool down.
  • Cut to serve this delicious Suji made wIthout Ghee.

Note

  • Don’t over roast Semolina or make it dark by over roasting.
  • You can use fresh shredded Coconut or desiccated Coconut

Ingredients
  

BATTER

  • 4 tbsp Refined flour / Maida
  • 3 tbsp Corn flour
  • Salt to taste
  • 1/2 tsp Kashmiri red chilli powder
  • 1/2 tsp Ginger-Garlic paste / Adrakh -Lasan
  • 1/2 tsp Pepper / Kali mirch
  • Some Water / Pani
  • 250 gm Cottage cheese / Paneer

FOR FRYING

  • OIl / Tel

FOR COOKING

  • 1 tbsp Oil / Tel
  • 1 tbsp chopped Garlic/ Lasan
  • 1 tbsp chopped Ginger / Adrakh
  • 1 big Onion / Pyaz
  • 1 small Capsicum / Shimla mirch
  • 1 +1/2 tsp Kashmiri red chilli powder
  • 1 tsp chopped green chillies / Hari mirch
  • 1 tsp chilli sauce or paste
  • 1/2 tsp Pepper / Kali mirch
  • 2 tsp Soya sauce
  • Salt to taste
  • 1 tbsp Tomato ketchup
  • 1 tbsp Corn flour

Instructions
 

  • Let’s start by making a semi thick batter with a mix of Refined flour, Corn flour, Salt, Kashmiri red chilli powder, Ginger – Garlic paste, Pepper and some Water little at a time.
  • Sprinkle some Corn flour over the pieces of Cottage cheese and then dip them in the made batter to completely coat it with the batter.
  • Fry the dipped Cottage cheese pieces in hot Oil over medium heat till golden crispy.Then strain them out and keep and aside.
  • Now in 1 tablespoons hot Oil add chopped Garlic and Ginger .Saute for a minute and then add green chillies, big chopped Onion and Capsicum pieces.
  • Sauté over high heat stirring continuously till the Onions turn translucent.
  • You can then switch of the stove now for a time being and add few spices to it – Kashmiri red chilli powder, Chilli sauce, Pepper, Soya sauce, Salt and Tomato ketchup.
  • After adding all the ingredients you can again switch on the stove and add about half cup of Water .
  • Also to make the gravy thick and glossy add a slurry of Corn flour.
  • Mix and let it come to boil.Before switching off the stove add the fried paneer pieces and mix everything gently.
