Microwave Masala Lady Finger [Bhindi] is a tasty yet a healthy recipe as it made with very less oil and turns up as stuffed baked and crispy spicy Bhindi recipe.
Ingredients: (Serving 4)
- 500 gms Lady Finger
- 2 Medium Sized Onions
- ½ Cup Chopped Coriander Leaves
- 1 tbsp Tomato Puree
- Salt as per Taste
- ½ tsp Red Chili Powder
- 1 tbsp Oil
- ½ tsp Garam Masala
- 1 tsp Coriander Powder
- 1 tsp Turmeric Powder
- 1 tsp Dry Mango Powder (Amchoor)
- 1 tsp Cumin Seed Powder
- ½ tsp Thymol seeds or Carom (Ajwain) {Optional}
- Cut and wash the Lady Finger in any shape as required.
- In a Micro ware bowl mix up Oil, Turmeric Powder, Onions, Chili Powder, Coriander Powder, Cumin Powder, Tomato Puree, Dry Mango Powder all together.
- Now add the Bhindi and mix again properly.
- Put this in Microwave for 5 min at high power.
- After 5 min add a little bit of Coriander leaves and stir the Bhindi so that it gets evenly cooked.
- Keep the Bhindi cooking in Microwave again for 5 min at high power.
- After the time over take out the Bhindi and sprinkle it up with little bit of Garam Masala and Coriander Leaves.
- Serve hot with Roti or Paratha.
- If you like you can add any other vegetable with it like Capsicum or Potatoes go well with Lady Finger.
