Microwave Masala Lady Finger [Bhindi] is a tasty yet a healthy recipe as it made with very less oil and turns up as stuffed baked and crispy spicy Bhindi recipe.
Ingredients: (Serving 4)
500 gms Lady Finger
2 Medium Sized Onions
½ Cup Chopped Coriander Leaves
1 tbsp Tomato Puree
Salt as per Taste
½ tsp Red Chili Powder
1 tbsp Oil
½ tsp Garam Masala
1 tsp Coriander Powder
1 tsp Turmeric Powder
1 tsp Dry Mango Powder (Amchoor)
1 tsp Cumin Seed Powder
½ tsp Thymol seeds or Carom (Ajwain) {Optional}
Method:
Cut and wash the Lady Finger in any shape as required.
In a Micro ware bowl mix up Oil, Turmeric Powder, Onions, Chili Powder, Coriander Powder, Cumin Powder, Tomato Puree, Dry Mango Powder all together.
Now add the Bhindi and mix again properly.
Put this in Microwave for 5 min at high power.
After 5 min add a little bit of Coriander leaves and stir the Bhindi so that it gets evenly cooked.
Keep the Bhindi cooking in Microwave again for 5 min at high power.
After the time over take out the Bhindi and sprinkle it up with little bit of Garam Masala and Coriander Leaves.
Serve hot with Roti or Paratha.
Variations:
If you like you can add any other vegetable with it like Capsicum or Potatoes go well with Lady Finger.
